    Container (15 oz.) Ricotta Cheese

    tsp. Vanilla

    Large Eggs

    Cups Flour

    Tbs. Baking Powder

  • 1

    tsp. Salt

  • 1 1/2

    Cups Powdered Sugar

  • 3

    Tbs. Milk

  • Red and Green Colored Sugars

Directions

Preheat oven to 350 degrees. In large bowl with mixer on low, cream sugar and margarine. Increase speed to high; beat well until light and fluffy (about 5 minutes). Reduce speed to medium and beat in ricotta cheese, vanilla, and eggs until well blended. Reduce speed to low and add flour, baking powder and salt; beat until dough forms. Drop by level Tablespoon about 2" apart on ungreased cookie sheet and bake for about 15 minutes until lightly browned (cookies will be soft). While cookies are cooling, prepare icing: mix 1 1/2 cups powdered sugar and about 3 Tbs. milk until smooth. Spread icing on cooled cookies and sprinkle with red and green colored sugar.
