Balsamic Chicken with Spinach and Couscous

Ingredients
- 3 Tbs olive oil
- 4 boneless chicken breasts, pounded
- salt and pepper to taste
- 1 Tbsp chopped garlic
- 8 oz baby spinach leaves
- 2 Tbs balsamic vinegar
- 1/2 cup chicken broth
- 1 cup canned diced tomatoes, with their juice
- 2 cups of hot couscous

Preparation
Step 1
Season chicken on both sides with salt and pepper. Saute in olive oil until cooked through, about 4 minutes per side. Remove to plate and keep warm. Lower heat, add a little more oil, saute garlic until fragrant. Add spinach and cook until wilted, 1 to 2 minutes, transfer to bowl. Add vinegar, broth, tomatoes to pan and cook 3 to 5 minutes until reduced and slightly thickened.
Divide couscous among plates. Top with spinach, chicken, and sauce.
