Snickerdoodle Pancake with Warm Vanilla Sauce

Ingredients

  • Sauce
  • 3 T sugar
  • 1 T cornstarch
  • 1 1/4 c half and half
  • 1 T butter
  • 1 t vanilla
  • pancakes
  • 2 c bisquick mix
  • 1/4 c sugar
  • 1 c milk
  • 2 eggs
  • 2 T ground cinnamon

Preparation

Step 1

in 1 1/2 qt saucepan mix 3 T sugar and cornstarch. Stir in half and half and butter until smooth. Heat to boiling over med heat, stir constantly. Boil about 2 min or until slightly thickened. Stir in vanilla. Keep warm.

Heat griddle or skillet over med heat or to 375*. Grease griddle with oil if necessary.

In med bowl stir pancake ingredients with spoon until well blended. For each pancake, pour slightly less than 1/4 c batter onto hot griddle. Cook until edges are dry; turn and cook until golden. Serve with warm sauce.
