Ingredients
- 12 tablespoons dry white wine
- 4 tablespoons white wine vinegar
- One half shallot
- One brined lemons cut up
- Salt-and-pepper

Preparation
Step 1
Boil mixture until three quarters reduced liquid
Strain solids
Whisk in 1/2 cup heavy cream
Remove from heat and whisk in one stick of cold butter
Spread solids over raw fish
Pour sauce over fish
Bake at 375 until done
