Brie Cheese with Sundried Tomatoes & Garlic

  • Brie cheese – whatever size wheel you need
  • 3 garlic cloves – finely chopped - about 4 tablespoons
  • 1 tsp. dried basil
  • 1/2 cup finely chopped shallots
  • 1/2 cup fresh parsley
  • 1 jar sun dried tomatoes in oil – julienned if you can find them, well drained
  • Pepper
  • Baguette or crackers

Step 1

Preheat oven to 350º

Place cheese in oven proof dish.

Slightly saute garlic, shallots, tomatoes. Remove from heat and add parsley and pepper to taste.

Brush brie with oil from tomato jar then cover with heated mixture.

Cover dish with foil or a lid as the tomatoes tend to burn easily.

Bake for approximately 20 minutes or until cheese is starting to soften.
Serve with sliced baguette or crackers.
