Ingredients
- 4 oz cream cheese, softened
- 10 oz frozen spinach chopped, thawed, well drained
- 1 1/4 c mozzarella
- 6 T parmesan cheese, divided
- 6 chicken breasts
- 1 egg
- 10 Ritz crackers, crushed (1/2 c)
- 1 1/2 c spaghetti sauce, heated
Preparation
Step 1
Mix cream cheese, spinach, 1 c mozzarella and 3 T parmesan. Spread evenly onto chicken breasts. Starting at one of the short ends, roll up chicken. Secure with wooden toothpick.
Beat egg in shallow bowl or pie plate. Mix remaining 3 T parmesan and the cracker crumbs in separate shallow bowl or pie plate. Dip chicken bundles in egg, then roll in crumb mixture. Bake in 13 x 9 dish greased at 375, 30 minutes. Serve with spaghetti sauce and ¼ c mozzarella cheese
