Rhubarb Crisp

  • 4 cups rhubarb, cut into 1" pieces
  • 2/3 cup sugar
  • 2 teaspoons grated orange rind
  • 1 teaspoon cornstarch
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/2 cup flour
  • 1/3 cup coconut
  • 1/3 cup butter or margarine

Step 1

Preheat oven to 350F. Grease a baking dish. Combine rhubarb, sugar, orange rind and cornstarch in prepared dish. Combine brown sugar, rolled oats, cinnamon, flour and coconut. Cut in butter until crumbly; sprinkle topping evenly over rhubarb. Bake for 40 minutes. Serve warm with whipped cream or ice cream, if desired.
