Vidalia Onion Soufflé

Ingredients
- 1 1/2 c Vidalia onions (chopped)
- 1/2 c Butter
- 8 oz Sour cream
- 1 tsp Dry dill
- 1/2 tsp Salt
- 8 oz Cheddar cheese (grated)
- 1 can Creamed corn (15 oz)
- 1/2 c Milk
- 1/2 tsp Worcestershire sauce
- 1 box Jiffy muffin mix
- 1 ea Egg (beaten)
- 1/4 tsp Tabasco
- Pepper to taste

Step 1
Prep Time: 30 minutes
Cook Time: 45 - 60 minutes at 325o F
Yield: 12 servings
1. Sauté onions in butter till soft, place aside to cool
2. Stir in sour cream, dill, salt and ½ the cheddar into onions
3. In a separate bowl, combine creamed corn, milk, Worcestershire sauce, muffin mix, egg, Tabasco and pepper
4. Spread muffin mix over the bottom of a greased 10 inch baking dish
5. Spread the onion mix over the muffin mix and top with remaining cheese
6. Bake uncovered 45 - 60 minutes a 325o F, till golden brown and firm
7. Rest 10 minutes prior to serving
