  • 7 apples
  • 3 large eggs
  • 1 c. sugar
  • 1 tsp vanilla
  • 1 c. flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/8 tsp grated nutmeg
  • confectioner's sugar for dusting
  • ice cream or whipped cream for serving



Step 1

Preheat oven to 350

Line bottom of springform pan with circle of parchment paper. Butter the pan and paper.

Place diced apples in pan.

Combine eggs and sugar, beating well. Add vanilla. Stir in dry ingredients until blended. Pour batter over apples, smoothing it over and into the apples. Gently tap pan on counter to evenly distribute batter.

Bake for 45-50 mins until tester comes out clean.

Let cool in pan for 20 mins. Flip cake onto plate and then again onto serving plate

When cool, dust with confectioners sugar.

Serve with ice cream or whipped cream.
