Ingredients

  • Filling:

    cup pecans

  • 1

    cup dates

  • 2

    tsp cocoa powder

  • ¼

    cup unsweetened coconut

  • 2

    drops stevia (optional)

  • Chocolate Coating:

  • Coconut Oil - melted

  • 1

    TBSP Cocoa Powder

Directions

In the food processor, add the pecans and chop until the pecans are fine textured. Stop before making Pecan butter :) Add the rest of the ingredients. Process until all the ingredients turn to a dough ball. Form dough into balls and set aside. In a tupperware container add dough balls and pour the chocolate mixture over top. If you need to geive the balls a shake or two until they are all covered in the chocolate. Place the Paleo Buckeyes in the freezer until the chocolate hardens. ** Please note - Coconut Oil melts at room temperature so store in freezer or in fridge
