Ingredients

  • Slurry:
  • 1/4 cup of flour
  • 2 cups of water
  • 4 cups of fat free milk
  • 1 celery stalk chopped
  • 1/2 cup of onion chopped
  • 8 oz. of sliced Baby Portobello mushrooms
  • 2 chicken cubes
  • Pepper to taste
  • Thyme to taste
  • 10 oz. of frozen mixed vegetables
  • 2 potatoes peeled and cut in small cubes
  • 16 oz of boiled chicken cut in small cubes
  • 1/2 cup of flour
  • 1/2 cup of water

Step 1

Slurry:
Mix water and flour in medium bowl and set aside

Pour remaining water and milk into a pot and bring to a slow boil.
Add celery, onion, mixed vegetables, chicken cubes, thyme, pepper and mushrooms and bring to a boil.

Partially cover and simmer for 20 minutes.

Add potatoes, simmer another 5 minutes

Add chicken and slowly whisk in slurry

Stir well and cook another 2 -3 minutes until soup thickens
