Hash Brown Bites
- 1 # frozen hash browns, thawed
- 2 T butter melted
- 1/2 cup tomato, diced
- !/2 cup each diced red and green pepper
- 1/2 cup shredded cheddar cheese
- 4 eggs, beaten
- 1 t. black pepper
- 1/2 cup bacon, cooked and crumbled
- Nonstick cooking spray
Preheat oven to 400.
Spray 2 regular muffin tins with nonstick spray. Spread thawed potatoes on paper towels to absorb excess water. Mix potatoes with melted butter and scoop 3 T into each cup. Pack mixture against sides. Bake for 20 min. Remove and cool. Place the tomatoes, peppers and cheese into cooled cups. Mix eggs and pepper and pour evenly over ing. in each cup. Bake at 325 degrees for 15 min. until eggs are firm. Remove from muffin tins and top with crumbled bacon.
