Pork and Green Chili Stew

Ingredients

  • 3 T . oil
  • 2 lbs. pork - cut in in 1" or smaller cubes (I like tenderloin)
  • 1 c. onions, diced
  • 1/2 t. minced garlic
  • 1/4 c. flour
  • 2 c. peeled chopped tomatoes (canned ok and often better if available tomatoes are not really ripe)
  • 2 7 oz. cans chopped green chilis, drained
  • 1 fresh Jalapeño, cored, seeded and minced
  • 1 t. salt
  • 1/2 t. freshly ground black pepper
  • 1/2 t. sugar
  • Tortillas - warmed

Preparation

Step 1

Brown pork. Stir in onion and garlic. Add flour. Cook 1-2 minutes. Add rest. Cook 2 1/2 hours.
Serve with flour tortillas.
