Ingredients
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 1/2 cup water
- 2 cups pumpkin puree
- 3-1/2 cups flour
- 2 tsp baking soda
- 4 tsp cinnamon
- 1 cup chopped pecans, dusted with flour
- 1-1/2 tsp salt

Preparation
Step 1
Combine sugar and oil. Add eggs, one at a time, beating after each addition. Add water and pumpkin. Sift together flour, baking soda, cinnamon and salt; add to pumpkin mixture. Stir in nuts and pour into 2 9x5x3" loaf pans, lightly greased. Bake at 350 degrees for 1 hour. Cool slightly in pans; turn out on rack to finish cooling. Let sit 1 day.
