Greek Dip

Lemon-dill white bean hummus topped with chopped veggies and feta cheese.

Ingredients

  • White Bean Hummus:
  • 1 can white kidney beans (cannellini), drained and rinsed
  • 1/4 C light sour cream
  • 2 T freshly squeezed lemon juice
  • 2 T tahini
  • 1 T minced fresh dill
  • 1 t minced garlic
  • 1 t liquid honey
  • 1 t grated lemon zest
  • 1/4 t salt
  • Pinch black pepper
  • Toppings:
  • 1/2 C diced tomatoes
  • 1/2 C diced cucumber
  • 1/3 C sliced green onions
  • 1/4 C feta cheese
  • 2 T sliced black olives

Preparation

Step 1

To make hummus, place all ingredients into a food processor and blend until smooth.

Spread bean mixture evenly over bottom of an 8-9" casserole dish or pie plate. Top with chopped toppings. Cover and refrigerate at least one hour before serving.

Serve with baked pita wedges or tortilla chips.
