Ingredients
- White Bean Hummus:
- 1 can white kidney beans (cannellini), drained and rinsed
- 1/4 C light sour cream
- 2 T freshly squeezed lemon juice
- 2 T tahini
- 1 T minced fresh dill
- 1 t minced garlic
- 1 t liquid honey
- 1 t grated lemon zest
- 1/4 t salt
- Pinch black pepper
- Toppings:
- 1/2 C diced tomatoes
- 1/2 C diced cucumber
- 1/3 C sliced green onions
- 1/4 C feta cheese
- 2 T sliced black olives
Preparation
Step 1
To make hummus, place all ingredients into a food processor and blend until smooth.
Spread bean mixture evenly over bottom of an 8-9" casserole dish or pie plate. Top with chopped toppings. Cover and refrigerate at least one hour before serving.
Serve with baked pita wedges or tortilla chips.
