Ingredients
- 4 C mashed sweet potatoes (about 3-4 large)
- 1/2 C butter, softened
- 3 eggs
- 1 C sugar
- 1/2 C evaporated milk
- 1 T lemon juice
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 C chopped pecans
- 1/2 C flaked coconut
- 2 C miniature marshmallows
Preparation
Step 1
Preheat oven to 350. Grease large baking dish. Combine potatoes and butter in large bowl. Mix well. Add eggs, sugar, milk, lemon juice, vanilla, cinnamon and salt. Mix well. Stir in pecans and coconut. Bake 20 minutes. Arrange marshmallows on top and bake another 3 minutes.
