Ingredients
- Juice and Zest of 4 lemons
- 4 Whole eggs
- 1 1/2 Cups sugar
- 1/2 lb butter, cubed
- 1/2 tsp corn starch

Step 1
1. Combine all the ingredients in a double boiler.
2. Keep the double boiler at a simmer. Stir the curd mixture continuously until it thickens, about 10 minutes.
3. Strain the warm lemon curd through a strainer. Lightly sprinkle the surface of the lemon curd with sugar and cool the lemon curd in the refrigerator.
* Lemon curd will keep for about a week in the refrigerator.
** To make a light filling for a fruit tart, fold whipped cream into lemon curd to make it lighter.
*** You may substitute limes for lemons in this recipe to make a lime curd.
