Ingredients
- 2 c. flour
- 1/2 c. sugar
- 1 tbsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. salt
- 1 egg
- 3/4 c. apple juice
- 1 medium apple, peeled and chopped
Preparation
Step 1
Preheat oven to 400 degrees. Lightly grease 24 mini muffin cups, or line with paper liners.
In large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg and salt. In small bowl, whisk egg and juice. Add to dry ingredients; stir until just moistened. (Batter will be lumpy.)
Stir in apple. Spoon batter into prepared muffin cups, filling each cup 3/4 full. Bake 12 - 15 minutes or until golden brown.
