Sweet Potato Casserole

Shirley at Jenny Craig gave me this recipe in 2003. She and I worked together there. I made it that year and Chelsea fell in love with it!

Ingredients

  • 6 or 7 Sweet Potatoes (enough to make 4 cups mashed)
  • 1 tsp vanilla
  • 1/3 cup evaporated milk
  • butter
  • 1/8 tsp salt
  • Brown sugar
  • pecans
  • flour

Preparation

Step 1

Boil potatoes.
Mash together with vanilla, mild and butter (it would be good to add cinnamon or any other spice)
Spread in a buttered casserole dish

Mix together in a separate bowl:
brown sugar, pecans, little flour and bits of cold butter
use fingers to mash it all together until it hold together
sprinkle on top of potatoes....it will cover completely...you won't see any potatoes.

Bake at 350 degrees for about 20 minutes, or until it's browned on top
