CHEESE*****Tortellini Skewers

25/12/13 - These went over really well and they are easy and very tasty. They'd make a great summer appetizer too. I put two tortellini, one tomato and one mini bocconcini on each skewer, which was perfect.

Ingredients

  • 4 tablespoons olive oil
  • 2 tablespoons jarred pesto
  • 2 teaspoons red wine vinegar
  • pinch of salt
  • try a pinch of hot pepper flakes too
  • 2 packages tri-colour cheese tortellini, cooked and cooled
  • 2 pints cherry tomatoes
  • 12 ounces fresh mozzarella, cubed
  • 1/4 cup minced fresh parsley (didn't bother)

Preparation

Step 1

*Mix* together the olive oil, pesto and vinegar in a bowl.

*On* small skewers, *thread* tortellini, cherry tomato and mozzarella. *Lay* the skewers on a platter (or in a ziplock bag if you will be transporting them) and lightly drizzle the dressing over them with a spoon.

*Serve* immediately or refrigerate, bringing to room temperature before serving.
