Ingredients

  • 1

    cup Quick oatmeal (or 4 instant packets)

  • 1

    and one-fourth cups boiling water

  • ½

    cup butter

  • 1

    cup white sugar

  • 1

    cup brown sugar

  • 2

    eggs, slightly beaten

  • 1

    and one-half cups flour

  • ½

    tsp. salt

  • 1

    tsp. cinnamon

  • ½

    tsp. nutmeg

  • 1

    tsp. baking soda

  • Topping:

  • ½

    cup butter

  • cup cream

  • 1

    cup brown sugar

  • 1

    tsp. vanilla

  • 1

    cup walnuts

  • 1

    cup coconut

Directions

Combine oatmeal, boiling water and butter. Cover and let stand 20 minutes. Add white sugar, brown sugar and eggs. Sift together the flour, salt, cinnamon, nutmeg and baking soda and add to above. Put in 9x13 pan. Bake at 350° for 30 minutes. Mix topping and spread on hot cake. Place under broiler for 2-3- minutes until bubbly.
