Ingredients

  • 3/4 teaspoon ground allspice
  • 1/4 cup hot brewed espresso
  • 60 vanilla wafers
  • 1/4 cup half and half
  • pinch of salt
  • 1 1/2 cups white chocolate chopped into pieces
  • 1/4 cup espresso beans

Preparation

Step 1

1. Line a cookie sheet with wax paper and set aside.

2. In a coffee cup, stir the allspice into the hot espresso to bloom the spice.

3. Process the wafers in a food processor until fine crumbs form, about 1 minute. Add the espresso mixture, half and half, and salt and process until a dough beings to form, about 30 seconds. Transfer the dough to a clean bowl.

4. Roll the mixture into 1 inch balls and place on the prepared cookie sheet. Refrigerate uncovered for 45 minutes.

5. Melt and temper the white chocolate. Dip each ball into the white chocolate, return to the cookie sheet, and top with a single espresso bean. Refrigerate for 1 hour or until solid.
