Ingredients

  • 2 cups sugar
  • 1 cup light corn syrup
  • 1 cup water
  • 2 cups raw spanish peanuts
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 1 Tablespoon butter
  • 1 teaspoon vanilla

Preparation

Step 1

Butter a cookie sheet.
In large saucepan combine first 3 ingredients.
Cook until sugar dissolves, stirring constantly.
Add peanuts and salt.
Cook to hard crack stage (300°), stirring occasionally.
When it reaches temperature, remove from heat and add soda, butter, and
vanilla.
Mix well.
Pour onto prepared cookie sheet, and spread to desired thickness.
When cool, crack into pieces.

Makes about 2 lbs.

I usually double this - when doubled it usually takes about 1 hour to get to hard-crack stage, so be patient.
