Ingredients

  • 6 pieces cold spicy chicken pieces
  • 6 cups cooked rotini noodles (1 lb. pkg)
  • 6 boiled eggs, yolks separated
  • 1 cup mayonnaise
  • 1 T Creole mustard
  • 1/4 cup minced onions
  • 1/4 cup celery
  • 1 tsp. minced garlic
  • 1/4 cup red and 1/4 cup green peppers
  • 1/4 cup sliced green onions
  • 1/2 cup pickle relish
  • Salt and black pepper to taste

Step 1

Bone chicken and cut into cubes, making sure skin is left intact. Set aside.
In a large mixing bowl, mash egg yolks with a fork. Blend in mayonnaise and Creole mustard, Finely dice egg whites and add to mixture. Add all other ingredients except pasta and chicken and mix well. Fold in pasta. Season with salt and pepper. Place on large serving platter. Add spicy chicken all around. Serve in large bowl or platter.
