Jennie’s Easy Cobbler

My friend, Jennie Maguire, RN in TX shared this recipe with me years ago and I love not only its simplicity but the flavor is just too good. I've had friends spend all day making a traditional cobbler, only to taste this and never go back to the traditional type. Try it, you'll like it, I promise!

Ingredients

  • 2 Cups Self Rising Flour
  • 2 Cups Sugar, White or Brown
  • 1 Cup Milk or Quinoa Milk
  • 1 Stick Butter/Margarine or Coconut Oil
  • 1 Can Pie Filling (Apple, Peach, Cherry, Blueberry, etc.)

Preparation

Step 1

1) Preheat oven to 350ºF.
2) Melt 1 Stick of Butter/Margarine in 9"x13" pan in the oven.
3) Stir Flour & Sugar together with a fork, add milk & stir until paste like with small lumps.
4) Once butter is melted in pan, remove pan from oven, tilt so butter covers all of the bottom & the lower part of the sides then place pan on level flat surface.
5) Pour batter into pan with melted butter/margarine. Spread into all the corners.
6) Evenly distribute pie filling throughout batter.
7) Place in oven for up to 40 min.
8) Remove when golden brown.
