Green Onion and Cheddar Biscuits

Ingredients

  • 1 cup bleached all purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 TBSP cold unsalted butter, diced
  • 1/4 cup shredded sharp cheddar
  • 2 TBSP minced green onion
  • 1/2 cup buttermilk, or as needed

Preparation

Step 1

1. Sift the flour, baking powder, baking soda, and salt into a mixing bowl. Cut the butte into the flour with a pastry blender or a fork, or rub between your fingers until the mixture resembles coarse crumbs. Stir in the cheddar and the green onion. Stir in the 1/2 cup buttermilk a few tablespoons at a time. Knead the dough in the bowl just until it holds together, adding additional buttermilk, a tablespoon at atime, if the dough seems too dry. Take care not to overwork the dough.

2. On a lightly floured surface, pat the dough into a circle about 6 inches in diameter and 1/2 inch thick. Divide the dough into four quarters and shape into rounds about 1 inch thick.

3. Place the biscuits into the preheated Emeril by T-Fal Pie & Cake Maker and close the lid. Bake until biscuits are golden on top and lightly browned on the bottom, 11 to 12 minutes.
