Ingredients
- 4 T olive oil
- 1 red bell pepper, seeded and diced
- 2 scallions (white part only, thinly sliced)
- Large leaves of kale, diced
- 8 eggs, beaten
- 3/4 cup grated jalepeno monterey jack cheese (or cheddar for non-spicy version)
- 3/4 cup grated monterey jack cheese
- Salt and pepper to taste
Preparation
Step 1
Preheat oven to 350.
Heat oil in the skillet. Saute the pepper, scallions and kale for 3-4 minutes until soft. Whisk the eggs, cheeses, salt and pepper into the pan.
Cook the frittata over low heat for 2-3 minutes. As the eggs begin to set, lift and tilt the uncooked portion over the set edges.
Put the fritatta in the oven for 12-15 minutes, until the eggs have set.
