Ingredients

  • 1/2 c cubed extra sharp cheddar cheese, divided
  • 8 oz gluten-free cream cheese (Philadelphia)
  • 1/4 c minced yellow onion
  • 1/4 c (about 3 slices) cooked and finely chopped gluten-free bacon* (optional)
  • 1 tbsp gluten-free Worcestershire sauce (Lea & Perrins Original)
  • 1 1/2 tsp hickory flavored liquid smoke (Wrights)
  • 1 tsp smoked paprika (McCormick's)
  • 1/2 c slivered almonds

Step 1

In the bowl of your mixer fitted with the dough hook, or a food processor, add cheddar cheese, cream cheese, onion, bacon, Worcestershire sauce, liquid smoke, and paprika. Mix until thoroughly combined.

Transfer the mixture to a plate or a chopping board and shape into a ball.

Sprinkle slivered almonds on a large plate and roll the cheeseball in the almonds. Shake off any excess almonds, transfer to a clean cheese serving board or plate, and serve with your favorite gluten-free crackers. (Be sure to add a cheese knife, as well.)

Cover leftovers with plastic wrap and store as long as the expiration date on the ingredient packages.

You can also fry additional bacon, cut it into small pieces and coat the cheeseball with nuts and bacon.

If you enjoy a bit of heat, add 1/8 to 1/4 teaspoon cayenne pepper to the mixture. The amount you use will depend upon your heat tolerance.
