Ingredients

  • 3/4 c. raisins (opt)
  • 1/4 c. molasses
  • 1/2 tsp soda
  • 2 eggs
  • 1/2 c. honey
  • 1 1/3 c. buttermilk
  • 3 c. whole wheat flour
  • 1/2 tsp salt
  • 1 c. chopped walnuts (opt)

Preparation

Step 1

Cover raisins with water and let stand to soften. In a large bowl stir together molasses and soda. With a wire whisk, blend in eggs, honey and buttermilk. Mix flour and salt then fold into wet ingredients just until mixed. Fold in well drained raisins and walnuts. Pour into greased loaf pan. Bake 50-60 minutes at 350 degrees or until knife comes out clean. Cool before slicing.
