Cavatelli and Broccoli
Quick, tasty weeknight meal! Cavatelli pasta with fresh cooked broccoli is quick to make. Serve with lots of Parmesan cheese.
Ingredients
- 1 (13 ounce) package frozen cavatelli pasta
- 2 - 3 heads broccoli cut into florets
- 1/2 cup olive oil
- 5 cloves garlic, minced
- 1 -1 1/2 vegetable water, (the water you boiled the broccoli in)
- 1 teaspoon salt
- 1 teaspoon red pepper flakes, or to taste
- LOTS grated Parmesan cheese.. a MUST

Step 1
In a large pot of boiling water, blanch broccoli for about 5 minutes. Drain and set aside.
Prior to draining, reserve about 1-1 1/2 cups of the water you boiled the broccoli in.
Heat olive oil in a large skillet over medium heat. Saute garlic until lightly golden taking care not to burn it. Add the broccoli. Saute, stirring occasionally for about 10 minutes. Broccoli should be tender, yet crisp to the bite or to your taste.
Meanwhile, cook cavatelli in salted boiling water. Drain. Add cooked pasta, vegetable water, red pepper flakes, and salt to the cooked broccoli dish. Toss gently.
Serve with generous amounts of freshly grated Parmesan cheese.
