  • 4 large egg whites
  • 1/2 t. distilled white or cider vinegar
  • 1 C sugar
  • 2 t. vanilla extract
  • 2 T. unsweetened cocoa powder

Preparation

Step 1

Preheat oven to 200. Line 2 baking sheets with foil.

1. In large bowl, beat egg whites with an electric mixer until frothy.
2. Add vinegar; beat until soft peaks form.
3. Increase speed to high and gradually add sugar, beat until glossy stiff peaks form.
4. Beat in vanilla.
5. (optional) remove half of meringue to another bowl; stir in cocoa until blended.
6. Spoon tablespoons of both meringues onto prepared baking sheets about 1 in. apart.
7. Bake until meringues feel dry and crip all the way through, about 3 hours.
8. Turn off oven, leave in oven for 1 hour.
9. Transfer baking sheets to wire racks to cool.
10. Peel meringues off foil and store in airtight container at room temp.
