  • 6 ears fresh corn
  • 3/4 cup freshly grated Cotija cheese
  • 3/4 teaspoon chili powder
  • 1/4 cup mayonnaise
  • 1 lime cut into six wedges



Step 1

Remove husks and silk from corn. When grill is hot, place corn directly on the grill grate and cook for about 10 minutes turning frequently until corn is browned

Meanwhile, mix cheese and chili powder on platter big enough to roll corn in. When corn is done cooking, take it off the grill spread with mayonnaise then roll in cheese mixture

Serve with lime wedges for squeezing over the corn
