Vegan Ice Cream (Sugar Free)

Ingredients

  • 1/2 cup raw cashews
  • 1/2 cup raw macadamia nuts (or more cashews)
  • 1 1/3 cups unsweetened plant-based milk
  • 1/8 + 1/16 tsp. salt (omit for healthier version)
  • 1 1/2 tsp. vanilla essence
  • 1/2 cup date paste (or 1/2 cup Medjool dates, pitted)

Preparation

Step 1

1. Combine all ingredients in a high-powered blender and blend until very smooth.

2. Pour mixture into ice cube trays and store in freezer until completely frozen.

3. Once frozen, place desired amount of ice cream into high-powered blender and blend until soft serve consistency. Using an ice cream scoop, divide ice cream among bowls and serve.


Note: If desired, place bowls with ice cream into freezer for 15 - 20 minutes to allow ice cream to become a little more firm before serving.
