LEMONADE COOKIES

  • 1 1/2 cup soft butter
  • 3/4 cup icing sugar
  • 1/4 tsp salt
  • 2 tsp grated lemon rind
  • 1 1/2 tsp lemon extract
  • 3 cups flour

Preparation

Step 1

Cream butter; gradually beat in sugar, salt, lemon rind and lemon extract. Blend in flour, part at a time. Chill 15 minutes. Shape dough into 1" balls. Place on un-greased cookie sheets. Flatten with glass dipped in sugar. Bake at 400F for 6-8 minutes.
