Caramel Pecan Cake

Ingredients
- 3 cups of flour
- 1/2 cup shortening
- 3/4 cup of milk
- 1/2 t. salt
- 5 eggs
- 2 1/4 cups packed brown sugar
- 1/2 cup of margarine or butter (softened)
- 1 1/2 t. of baking powder
- 1 1/2 t. vanilla
- 1 cup chopped pecans
- (Note: you can use self rising flour but if you do leave out the baking powder and
- salt. )

Preparation
Step 1
Beat all ingredients (EXCEPT PECANS) on low speed for 30 seconds.
Beat on high speed for 3 minutes
Stir in Pecans
Pour mixture into bundt baking pan
Bake at 325 degrees for one hour and between 5 and 15 minutes until done.
Cool for 20 minutes (in pan)
Remove from pan and cool on rack.
(Optional: Sprinkle with powdered sugar if desired).
