Make Ahead Casserole

This is easy to modify for vegetarians. Just omit the sausage and add a layer of veggies; red peppers or broccoli would be great.

Ingredients

  • 2 slices wheat bread, torn or cut into cubes
  • 1 lb ground Italian sausage
  • 6 eggs, beaten
  • 2 cups milk
  • 1 tsp dry mustard
  • 1/2 tsp salt
  • pepper
  • 1 1/2 cups thinly sliced, cooked, unpeeled red potatoes
  • 1 1/2 cups grated cheddar cheese

Preparation

Step 1

Place bread in a buttered 8x11x2 casserole. Fry sausage until it's almost done; drain off fat. Mix eggs, milk, and spices. Layer sausage over bread, and top with a layer of potatoes. Sprinkle cheese on top. Pour egg mixture over the casserole. Cover and refrigerate overnight. In the morning, bake at 350 for 30 minutes or until set.
