Ingredients

  • 2/3 lb Italian sausage, casing removed
  • 5 garlic cloves, finely diced
  • 1 tsp. crushed pepper flakes
  • 2 head of escarole, very coarsely chopped
  • 2 cans cannellini beans
  • 1/2 cup white wine
  • 3 cups chicken broth

Step 1

In a Dutch oven, sear the Italian sausage until it browns a bit, then add the garlic and pepper flakes and cook for one minute. Add the wine and heat to a boil, and then add the roughly chopped escarole, beans and chicken broth. Simmer the mixture with the lid of the Dutch oven just barely cracked open.
