Ingredients
- 2 tsp. vegetable oil
- 1 large onion (abiut 3/4 cup minced)
- 2 cans fat free chicken broth
- 1 15oz. can pure pumpkin puree
- 1/4 cup orange concentrate
- 1 Tbl. Ginger
- 1/4 tsp. salt
- 1 cup cream
- 1/4 tsp. cayenne pepper – optional
- Sour cream and/or croutons for garnish

Preparation
Step 1
1.Heat oil over low heat. Add onion to pot & cook till they soften – about 2 minutes.
2.Add chicken broth, pumpkin, orange juice comncentrate, ginger, pepper and salt. Stir to mix. Raise heat to high bring soup just to a boil.
3.Reduce heat to low and add the cream. Simmer stirring often – up tp 30 minutes.
4.Ladle into bowls and garnish.
** Can make up to 2 days ahead and reheat.
