Ingredients

  • 2 tsp. vegetable oil
  • 1 large onion (abiut 3/4 cup minced)
  • 2 cans fat free chicken broth
  • 1 15oz. can pure pumpkin puree
  • 1/4 cup orange concentrate
  • 1 Tbl. Ginger
  • 1/4 tsp. salt
  • 1 cup cream
  • 1/4 tsp. cayenne pepper – optional
  • Sour cream and/or croutons for garnish

Preparation

Step 1

1.Heat oil over low heat. Add onion to pot & cook till they soften – about 2 minutes.
2.Add chicken broth, pumpkin, orange juice comncentrate, ginger, pepper and salt. Stir to mix. Raise heat to high bring soup just to a boil.
3.Reduce heat to low and add the cream. Simmer stirring often – up tp 30 minutes.
4.Ladle into bowls and garnish.
