Cornmeal Flour Cake (Bolo de Fubá)

Ingredients

  • 2 cups finely ground cornmeal (must be finely ground!)
  • 1 cup all purpose flour
  • 1 1/2 cup sugar
  • 1 t. baking powder
  • 1 cup corn oil
  • 1/2 c. milk
  • 1 cup buttermilk
  • 3 eggs
  • 1 teaspoon salt
  • Powdered sugar for decoration

Preparation

Step 1

1. Preheat oven to 350°. Grease Bundt pan or angel food pan lightly with butter or oil.

2. Place all ingredients except powdered sugar in a blender. Blend until well mixed.

3. Pour into prepared pan. Place pan in oven and bake 35-40 minutes, or until cake has risen and middle of cake springs back to the touch.

4. Remove from oven. Cool in pan 5-10 minutes. Loosen sides with a knife, then invert the cake onto a plate. Place cake right side up and dust with powdered sugar before serving.

Store cake wrapped in plastic in refrigerator up to 4-5 days.
