Ingredients
- Ingredients:
- 4.5 cups rice
- 3/4 teaspoons salt
- 1 cup canola oil, divided
- 6 large eggs, beaten to blend
- 6 boneless chicken breasts, cut into
- bite size pieces
- 12 oz finely diced carrots
- 4.5 cups broccoli, cut into sm pieces
- salt and pepper
- 1 cup reduced-sodium soy sauce
- 3 tsp toasted sesame oil

Directions:
1. Combine water with rice and cook. Transfer the rice to a baking sheet to cool to room temperature. Cover and refrigerate. Heat 1 tbsp oil in large wok over med high heat. Add the eggs and stir with a fork for about 30 seconds. Remove and set aside on a plate. Heat 1 tbsp of oil in wok season chicken with s&p and cook for 4 to 5 mins or until golden brown and cooked through. Remove to a plate. Heat oil in wok over med high heat.
2. Add carrots and broccoli to wok and stir fry for 2 minutes. Add cold rice and stir fry for 2 mins until heated through. Season with s&p. Stir in eggs, chicken,. Add the soy sauce and sesame oil and continue to stir fry for 1 minute.
