Crustless Crab Quiche


One of my families favorite dishes and it's so simple to make. Very versatile too, try adding some chopped spinach or Ghouda cheese instead or cheddar. Serve alone for breakfast or with a salad and dinner roll for supper.

  • 4 ounces thawed, thoroughly drained frozen crab meat, flaked
  • 4 ounces cheddar cheese, shredded
  • 1/2 cup green onions, chopped
  • 4 eggs or eggbeaters
  • 1 cup evaporated skimmed milk
  • 1/2 teaspoon each salt and powered mustard
  • 1/8 teaspoon pepper
  • 1 dash Paprika

Step 1

Preheat oven to 400°F. Spray an 8-inch glass pie plate with nonstick cooking spray

In medium bowl combine crab meat, cheese and green onions. Using the back of a spoon, press crab meat mix over bottom and up the sides of the pie plate

Using a wire whisk in medium mixing bowl, beat together eggs, milk, salt, mustard and pepper. Pour over crab meat mix. Sprinkle top with paprika.

Bake until set, about 30 minutes. Remove from oven and let stand 5 minutes before serving.
