Ingredients
- 2-3 tbsp Ancho chili paste
- 2 carrots, chopped
- 1 clove garlic, minced
- 1 can, diced tomatoes
- 6-8 sprigs, fresh cilantro
- 2 medium red potatoes
- 1 c corn kernels
- 1 tbsp Pasilla chili powder
- 1 tbsp Mexican chili powder
- 1 tbsp cumin
- 2 limes, juiced
- Serve with tortilla chips, sour cream and Monterey Jack cheese

Step 1
Combine all ingredients, bring to a simmer for 30-40 minutes. Serve with tortilla chips, sour cream and Monterey Jack cheese.
