Ingredients
- l lb package dried black-eyed peas (soaked overnight in water to cover)
- 4 cups of water
- 2 t salt
- 1/4 t pepper
- 1 large onion chopped
- 2 stalks of celery chopped (optional)
- 1/2 lb of salt pork sliced (or 2 ham hocks, or 1 hog jowl)

Preparation
Step 1
Soak peas in water overnight; drain and put into crock-pot
Add water and remaining ingredients
Cover and cook on HIGH for 1-2 hours,
then to LOW heat for 8-9 hours.
