Spiced Chickpea and Feta Sandwiches

Ingredients
- 15oz can low-sodium chickpeas, rinsed and drained
- 3/4 tsp Spanish smoked paprika or salt free chili poweder
- 1/2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp caraway seeds
- 1 1/2 tsp minced garlic
- 4 tsp lemon juice
- 1 Tbsp evoo
- 2 medium tomatoes
- 8 slices whole grain bread
- 16 large fresh basil leaves
- 2 oz (1/3 cup) crumbled Feta
- 1/2 cup shredded carrot (in bag)
Preparation
Step 1
1. Combine chickpeas, spices, garlic, lemon juice and olive oil in a good processor. Pulse a few times until chickpeas are coarsely chopped and slightly pasty, but not smooth. Stir in salt and epper to taste.
2. Halve each tomato horizontally; then gently remove seeds. Cut tomatoes into 1/4 inch thick slices.
3. Spread chickpea mix on all eight bread slices. Top for pieces with tomatoes, then basil, feta and carrots. Tope with bread. Enjoy.
