Ingredients
- 1 (2 1/2 - 3 lb.) chicken, cooked and cleaned
- 1 1/2 cups cooked rice
- 1 cup sliced celery
- 1/3 cup finely chopped onion
- 1/2 cup slivered toasted almonds
- 3/4 cup mayo
- 1/4 cup water
- 1 (10 3/4 oz.) can cream of chicken soup
- 1 (4 oz.) can sliced mushrooms, drained
- 1 T. lemon juice
- 1/2 t. salt
- 1/4 t. pepper
- 3 hard cooked eggs sliced
- 2 cups crushed potato chips
Preparation
Step 1
Combine all ingredients except eggs and potato chips; stir gently until well blended. Gently stir in eggs. Spoon mixture into a lightly greased 9x13 baking dish. Top with potato chips. Bake at 350 for one hour.
