Cajun Black Beans with Yellow Rice

Ingredients
- 1 large bell pepper chopped
- 1 large onion chopped
- 5 cloves garlic minced
- 1/3 cup (or less) of Olive Oil
- 5 cans (15 oz ea.) black beans
- 1/2 cup pimento - stuffed olives, sliced
- 1/4 cup dry white wine
- 3 T vinegar
- 1 bay leaf
- 1 t ground oregano
- 1/2 t. salt
- 1/2 t. pepper
- 1/4 t ground cumin
- 2 packages (5 oz ea) hot cooked yellow rice
- Optional: chopped green onions
- Optional: Shredded cheddar cheese

Preparation
Step 1
In a large pot, saute bell pepper, onion, and garlic in olive oil until tender
Add beans, olives, wine, vinegar, bay leaf, salt,
pepper, oregano and cumin stirring well.
Cover and bring to a boil; then reduce heat and simmer 2-3 hours or until desired degree of doneness, adding water if necessary
Remove and discard bay leaf.
Serve over hot cooked yellow rice, prepared according to package directions
Top with shredded cheese, and garnish with chopped green onions.
