Green & Gold Fettucini

An easy use of leftover or canned salmon. You can use any fettucini, or combination of pasta

Ingredients

  • 13 oz salmon
  • 2 Tablespoons Olive oil
  • 1 clove garlic, minced
  • 1/4 cup parsley
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • black pepper to taste
  • 4 oz fettucini, cooked
  • 4 oz spinach fettucini, cooked
  • 2 tsp lemon juice

Preparation

Step 1

Break salmon into large chunks, remove skin if desired. Heat olive oil in large skillet. Saute garlic until golden. Add parsley, oregano, basil & black peper, saute 30 sec. Pour half of herb sauce over fettucini, toss. Add salmon & lemon juice to remaining sauce. Heat until seafood is hot. Spoon over fettucini. SErvice with Parmesan cheese.
