Bacon Wrapped Pineapple

Ingredients

  • 1 can (8 oz.) pineapple chunks (juiced packed); drained. Reserve 3 tablespoons of juice.
  • 2 - tablespoons soy sauce
  • 1/4 teaspoon ground ginger
  • Dash of garlic powder
  • 6 slices of bacon cut into thirds

Preparation

Step 1

Combine juice, soy sauce, ginger and garlic powder in small bowl. Add pineapple and let stand 1 - 2 hours. Drain. Wrap piece of bacon around each pineapple chunk - secure with wooden toothpick. In a microwave safe dish, line with several paper towels. Arrange appetizers around pan in arch with space between them. Microwave on high for 5 to 7 minutes and rotate. Rearrange several times while baking.
