PGX Italian Chicken with Chickpeas

Ingredients

  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. olive oil
  • 1 1/3 cups sliced white onion
  • 1 cup green bell pepper strips
  • 1 Tbsp. minced garlic
  • 1 15 1/2 ounce can chickpeas; drained
  • 1 14 1/2 ounce can diced tomatoes; drained
  • 1 Tbsp. chopped basil
  • 1 Tbsp. chopped oregano

Preparation

Step 1

Sprinkle chicken with salt and pepper.

Heat oil in a large nonstick skillet over medium-high heat.

Add chicken to pan; cook 2 minutes on each side or until browned.

Add onion and bell pepper; sauté 4 minutes. Reduce heat to medium.

Add garlic, chickpeas, tomatoes, basil and oregano and cook for 8 minutes or until thoroughly heated.
