PGX Spinach Souffle

Ingredients

  • 2 10-ounce packages frozen leaf spinach – thawed
  • 1 large egg
  • 1/3 cup low fat milk
  • 1/3 cup grated parmesan cheese
  • 1 tsp. crushed garlic
  • Salt and pepper to taste

Preparation

Step 1

Preheat oven to 350 degrees F.

In a medium bowl whisk together the egg, milk, cheese, garlic, salt and pepper. Fold in spinach. Place in a small casserole dish.

Bake for 20 minutes, or until lightly set.
